Ingredients
- 1 bunch asparagus, ends trimmed
- 4 portabella mushrooms, de-gilled
- 1 package mixed sweet peppers
- ½ cup extra-virgin olive oil
- ¼ cup balsamic vinegar
- 2 teaspoons kosher or sea salt (coarse)
Preparation
Preheat the grill for direct heat on medium-high.
Toss the ingredients in a bowl and coat with the oil, vinegar and salt. Grill the vegetables, turning often for 8–10 minutes or until the outside of the asparagus gives under pressure. Take off the heat, slice the mushrooms and arrange on a platter.
