Ingredients
- 1 package of Amy's Quarter Pound Veggie Burger*
- 1 package Alvarado St. Bakery Sprouted Burger Buns
- 8 slices Soy-Sation Swiss flavored "cheese"
- ¼ cup Vegenaise
- ¼ cup Dijon-style mustard
- 2 ripe avocados, halved and sliced
- 1 ripe heirloom tomato, sliced
- 1 small red onion, sliced into rings
- 4 leaves butter (bibb) lettuce
Preparation
Stir together vegenaise and Dijon-style mustard; set aside.
Pan-fry veggie burgers in lightly oiled skilled for 3 to 4 minutes each side. Top patties with 2 slices each of soy cheese.
Assemble burgers starting with a tablespoon of mustard mixture spread on both sides of the bun. Layer with lettuce, veggie burger, onion, tomatoes, and finally avocado.
We served our veggie burgers with one of our favorites treats - Funyuns!
