Blue Cheese & Bacon Burgers

Ingredients
- 1 ½ pounds Fresh to Market ground beef
- 8 slices smoked bacon
- ½ cup crumbled blue cheese or 4 slices from a wedge of Shaft's Blue Cheese
- 2 ripe tomatoes
- 4 green leaf lettuce leaves
- ½ small red onion sliced into rings
- Your favorite hamburger buns!
Preparation
Season ground beef with cracked black pepper and sea salt, mix together but be careful to not overly work the meat. Form mixture into 4 even-sized patties then set aside on a plate.
Fry bacon over low heat to a crisp (less so if you prefer your bacon that way). Rinse lettuce leaves in cool water, pat dry. Slice red onion and tomatoes. If youve chosen a wedge of Shafts Blue Cheese from our Specialty Cheese department over crumbled blue cheese, slice 4 healthy pieces off; set these aside as well.
Heat grill to medium. Cook hamburger patties for 4 to 5 minutes each side, turning once. While the burgers are cooking, toast your buns on the grill to add a little extra flavor.
Make your burger front and center by building them starting with lettuce, tomato, red onion and then bacon on the bottom half of the bun. Place the burger over the bacon then finish with blue cheese. Offer a variety of condiments for your guests to choose from. Serve!

Wow does that look great it's lunchtime here and i have nothing that comes close. The beer of the month club i'm part of sent me a few micro brews and they'd be great with a burger i think its time to head out and get one
