Latin for "to break open", the Burgare features a great new product: Shrubs! These vinegar-based mixers can be used in cocktails (among its many other uses). Although they are trendy now, shrubs date back to the Colonial era in America and were popular before the advent of refrigeration. Shrubs are made from a combination of sweet and savory elements: vinegar adds acidity balanced by the infused fruits' sweetness, and you can use shrubs in a drink as you would use bitters. These shrubs, from Shrub and Company, are made locally in Berkeley using fresh organic fruit juices and a number of different vinegars. You only need to use a fourth- to half-ounce per drink, and they last a long time.
- ⅓ cup Santa Cruz Apple Juice
- ½ teaspoon cinnamon
- 1 tablespoon B & E Bourbon
- 1 tablespoon Shrub & Co Tart Apple Shrub
- Whipped cream
In a small saucepan hit apple juice and cinnamon until hot. Pour contents into large coffee cup and add Bourbon and Tart Apple Shrub. Top off with whipped cream and cinnamon for garnish.
