When asked about her favorite type of cheese, Christina Strategos simply can’t say enough good things about aged goat cheese. She loves it! “The different textures between the bloomy rind, the fudgy outer layer and then the soft, crumbly center are an amazing combination together!” she says. “The center is always so refreshing and light, with the perfect creaminess, where the outer layer is smooth like butter and literally melts on your tongue!” Christina recommends serving goat cheese mixed with fresh fruit and stuffed in a crepe or on French toast. She’s also enamored with Marin County cheese company Cowgirl Creamery, both for their environmentally friendly cheese-making practices and their organic, artisan products — she especially recommends their Mt. Tam and Red Hawk varieties.
