Roasted Shishito Peppers with Garlic & Cumin

These delicious roasted peppers make a great snack on their own or a tasty side for any summer dish.
Ingredients
- 3 tablespoons olive oil
- 1 pint shishito peppers
- 2 cloves garlic, shaved thin
- 1 teaspoon cumin
- ¼ teaspoon chili flakes
- Salt to taste
Preparation
In a cast iron skillet, heat olive oil until smoking. Arrange peppers in a single layer, char and then toss, until peppers are evenly charred. Push peppers to the front of the pan.
Tilt the pan back to allow the oil to collect in the back of the pan. Add the garlic to the oil and cook until it just begins to brown. Add cumin and chili flakes and toss with the peppers. Season with salt and serve.
