Traditionally, Irish Soda Bread is made using only four ingredients: flour, baking soda, buttermilk (or sour milk) and salt. When bicarbonate of soda became available in the 19th century, it gave Irish bakers an easy and inexpensive alternative to yeast as a leavening agent. The reaction between the baking soda and acidic buttermilk also gives this quick bread a good rise without the need for kneading.
Because of the simplicity, speed and affordability of this recipe, Irish Soda Bread quickly became a common staple in Irish homes. While typically a plain, brown bread, it can also be made as a white bread and with extra ingredients like caraway seeds or dried fruit.
