Dill Onion Yogurt Brined Chicken Thighs
Packed with flavor and never dry!
Chicken thighs, though intimidating for some, are the perfect cut of poultry for grilling. They work well with heat, they don’t dry out as quickly as other cuts, and they take well to marinades. Look for Rosie Organic Chicken brand at the meat counter.
Speaking of marinades, yogurt is the perfect go-to. Its thick consistency helps lock in moisture before grilling and it is the perfect conduit for whatever flavors you prefer. For this recipe, a bit of lemon juice and zest, some fresh dill, and a little salt and pepper is all you need! Grilled Napa Cabbage with Blue Cheese Butter
So easy to make and so unexpected!
CA Grown Napa cabbage is a secret ingredient not many have tried on the grill! It’s perfect because of its shape and leafy layers, maximizing the grill-infused flavor while retaining its classic crunch.
While the cabbage is transforming, add a grill-friendly skillet and heat up some salted Clover Sonoma butter and Point Reyes Farmstead Cheese Co. Blue Cheese, both made with local Real California Milk. This compound butter pairs perfectly with the mildly sweet flavor of the cabbage. Tip: This butter can also be used on CA Grown steaks, so throw a few on for later in the week.
