1. Preheat oven to 350ºF. Place in oven on a shallow roasting pan in the oven on the center rack. Roast at 350º for 10-15 minutes per pound or until a thermometer inserted into the center of the thickest section of the roast reads:
- 120—125ºF for Rare
- 130—135ºF for Medium Rare
- 140—145º for Medium
- 150—155º for Medium-Well
- 160—165ºF for Well Done
2. Remove the roast from the oven, place a piece of foil loosely over the roast and let rest for 15 minutes.
