Enjoy a healthy salad packed with flavor, texture and fresh veggies.
Wheat Berry, Cashew & Chicken Salad:
- 2 pounds wheat berries
- ½ pound snow peas, blanched and halved
- 1¼ pounds picked rotisserie chicken (about 1 whole chicken)
- 1 bunch green onions, sliced thin
- 1 cup roasted cashews
- 8 ounces shredded carrots
- 1 ounce oyster sauce
- 1 cup Sesame Soy Dressing
Sesame Soy Dressing:
- 1 teaspoon toasted sesame seeds
- 1 tablespoon lemon juice
- 3 tablespoons sugar
- 4 ounces soy sauce
- 5 ounces rice vinegar
- 3 tablespoons sesame oil
- 5 ounces canola oil
Bring a large and small pot of water to a boil on the stove. Add wheat berries to the large pot of water and boil over medium-high heat until berries have softened enough to chew, about 1 hour. Strain in a colander and rinse with cold water until cool.
In the small pot of boiling water, blanch snow peas for about 10 seconds, then immediately shock in ice water.
To make the Sesame Soy Dressing, combine all ingredients and mix well.
To make the salad, combine wheat berries, snow peas and all remaining salad ingredients in a large mixing bowl. Mix until evenly incorporated, then serve.
