Gluten-Free Peanut Butter Cookies

Enjoy all the goodness of peanut butter cookies without any of the gluten!
Ingredients
- 2 cups creamy peanut butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 3 eggs
- 1 teaspoon kosher salt
- 2 teaspoons baking soda
Preparation
Combine all ingredients in the bowl of a mixer until incorporated. Roll dough into 1-inch balls, then refrigerate for 1 hour.
Preheat oven to 350°F.
Place dough balls 1 inch apart on a cookie sheet lined with parchment paper, then use a fork to press a criss-cross pattern onto each cookie.
Bake for about 12 minutes, until the edges of the cookies turn golden brown.
