This is a gourmet take on a classic potato dish with creamy brie, smoked salmon and savory leeks. Delicious!
- 1½ cups milk
- ¼ cup all-purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon cracked pepper
- 3 pounds Yukon gold potatoes, cut into ¼-inch thick slices
- 2 leeks, sliced
- 8 ounces goat milk brie, small diced
- 8 ounces Norwegian smoked salmon
Preheat oven to 350°F. Coat a 9x13-inch baking dish with olive oil and set aside.
Whisk together milk, flour, salt and pepper in a work bowl.
Layer half of the potatoes in the baking dish so they overlap, then top with half of the leeks and half of the brie. Pour half of the milk mixture over the layered potatoes, leeks and brie, then top with half of the smoked salmon. Repeat layering with remaining potatoes, then milk mixture, then leeks and brie, and finally smoked salmon.
Cover dish with foil and bake 45 minutes, then remove foil bake uncovered for 20 minutes, until golden brown. Let rest 15 minutes before serving.
