Here's a way to make your turkey burger sing, dance and yell OPA!
- 1 pound ground turkey
- 2 tablespoons dried cranberries
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 4 ounces Bulgarian feta cheese
- 2 brioche hamburger buns with sesame seeds
- 4 ounces olive tapenade
- 1 cup loosely packed baby arugula
Preheat grill to medium-high heat.
Combine ground turkey, cranberries, salt and pepper and form into two patties. Place patties onto grill and cook approximately 18-20 minutes or to 160°F internal temperature; rotate the patties once per side and turn them over once during cooking time. Top patties with 2 ounces of feta cheese each for the last 6-8 minutes of cooking.
To assemble burger, cut buns in half and spread 2 ounces of olive tapenade onto each bottom section of bun. Place baby arugula on top of olive tapenade, then place patty on top of arugula. Finish with bun top and serve with beet and kale chips.
