Amaretto Horchata

For a sweet and spicy sip, try the creamy vanilla horchata in an alcoholic or nonalcoholic version.
Ingredients
Horchata Base:
- 1 cup white rice
- 4 cups water
- 2 tablespoons cinnamon
- 1 tablespoon cayenne pepper
- 1 vanilla bean
Alcoholic Version:
- 1 ounce amaretto
- 1 ounce bourbon
- Cinnamon and cayenne pepper for garnish
Nonalcoholic Version:
- ½-1 ounce agave sweetener
- Cinnamon and cayenne pepper for garnish
Preparation
Add rice, water, cinnamon, cayenne pepper and vanilla bean to a bowl and let soak for at least 8 hours. Remove vanilla bean from mixture, blend remaining ingredients and strain through fine mesh screen.
For the alcoholic version, combine ice, 1 ounce amaretto, 1 ounce bourbon and 6 ounces of horchata per serving. Sprinkle with cinnamon and cayenne pepper for garnish.
For the nonalcoholic drink, add ½-1 ounce agave sweetener per 8 ounces of horchata and garnish with cinnamon and cayenne pepper.
