Mediterranean Chicken Thighs

Preparation
Season chicken with 2 teaspoons salt and 2 teaspoons pepper.
Heat large pan over medium-high heat. Add oil to hot pan and when it smokes, add chicken. Sauté over high heat for 3–4 minutes, or until chicken is browned, then flip and sauté for another 3–4 minutes.
Add garlic, then capers, lemon juice, and tomatoes and sauté for 4–5 minutes, or until a thermometer inserted into the thickest part of the chicken reads 165°F.
Add basil and lemon zest, season with salt and pepper to taste, toss together, and serve.
