Sweet watermelon and cherries mingle with mint, creating a perfect refreshment—and, as a bonus, this frozen treat doesn't require an ice cream machine.
- 4 cups watermelon, large diced
- 2 cups cherries, stemmed and pitted
- 3 tablespoons granulated sugar
- 8 mint leaves
- 1 lemon, juiced
- ¼ teaspoon salt
Place all ingredients in a blender and puree on high for 20 seconds. Strain through a mesh strainer. Place in a shallow dish and place in freezer.
Stir every fifteen minutes with a fork, scraping the sides, until the granita is frozen and resembles shaved ice. Alternately, let mixture freeze solid and scrape with a fork to create the desired texture.
