Frozen Fruit Skewers

Ingredients
Fruit Skewers:

Chocolate Coating:

Preparation
Thread fruit onto bamboo skewers, alternating varieties as desired. Place skewers on a parchment-lined sheet pan in the freezer for about 1 hour, until fruit is frozen.
To make the chocolate coating, place chocolate and coconut oil in a bowl over a double boiler for about 5 minutes to melt. Once the chocolate is completely melted and the oil is incorporated, remove bowl from heat. Let chocolate cool so that it is just warm but still fluid. If using multiple types of chocolate, repeat with remaining varieties.
Drizzle chocolate over frozen fruit skewers or dip the skewers in the melted chocolate as desired. Sprinkle skewers with shredded coconut and chopped pecans, then place back in the freezer until ready to serve.
