Yummy, healthy, seasonal and delicious, these skewers make the perfect guilt-free dessert.
- 1 pint raspberries
- 1 package strawberries, hulled
- 3–4 bananas
- 1 pint blueberries
- 24 bamboo skewers
- 1 cup dark or white chocolate chips
- 3 tablespoons coconut oil
- Shredded coconut
- Chopped pecans
Thread fruit onto bamboo skewers, alternating varieties as desired. Place skewers on a parchment-lined sheet pan in the freezer for about 1 hour, until fruit is frozen.
To make the chocolate drizzle, place a bowl over a double boiler, and add the chocolate and coconut oil. Once the chocolate is completely melted and the oil is incorporated, remove bowl from heat. Let chocolate cool so that it is just warm but still fluid.
Dip skewers into the chocolate, or drizzle chocolate over frozen skewers as desired. Sprinkle with shredded coconut and chopped pecans, and place back in freezer until ready to serve.
