Sweet mango, spicy poblanos, flavorful cilantro and a twist of lime combine with hearty grains in Path of Life's unique Southwest Mango Quinoa Blend. Serve with seared bavette steak to make a clean and satisfying meal.
- 1 bavette steak (14–16 ounces)
- 2 Roma tomatoes, small diced
- 1 avocado, small diced
- 2 limes, juiced
- ¼ cup chopped cilantro
- 1 serrano pepper, minced
- Salt and black pepper, to taste
- Granulated garlic, to taste
- 1 tablespoon vegetable oil
- 1 package Path of Life Southwest Mango Quinoa Blend
Remove bavette from refrigeration 20 minutes prior to cooking.
For the Avocado Salsa, mix together the tomatoes, avocado, lime juice, cilantro and serrano pepper in a work bowl and season with salt.
Heat a heavy-bottomed sauté pan or cast iron skillet over medium-high heat. Season both sides of the bavette with salt, pepper and granulated garlic. Add the oil to the pan and sear the bavette for 3–4 minutes per side for medium rare. Remove from pan and let rest for 5 minutes before slicing.
Heat the Path of Life Southwest Mango Quinoa Blend per package instructions. Top steak with salsa and serve with quinoa.
