Give turkey burgers some extra flair with easy-to-make sumac mayo and caramelized onions for a sweet and savory kick.
Mix ground turkey with the fennel seeds, shallots, salt and pepper. Form into 4 patties, about 4 ounces each. Separately, mix together the mayonnaise, sumac and chives.
Cook burgers on a grill or in a sauté pan until the internal temperature reaches 165°F. Place the onions on grill or in sauté pan to caramelize.
Toast the brioche buns and spread the sumac mayo on both top and bottom. Build the burger with the burger patty, tomatoes, caramelized onion, pepperoncini and mixed greens, then serve.
