Make this whole meal on your outdoor grill by using an oven-safe pan for the vegetables, which can be roasted right under the grill cover.
- 1 Nugget Markets' Herb & Garlic Marinated Flank Steak
- 2 tablespoons olive oil
- 2 cups baby potatoes, quartered
- 4 cups broccoli florets
- 1 red bell pepper, julienned
- 2 cloves garlic, minced
- Salt and pepper, to taste
Heat grill to medium-high.
Remove any excess marinade from flank steak, then grill over direct heat for 5–7 minutes per side for medium-rare. Remove from grill and let rest for 10 minutes before slicing.
Heat a heavy-bottomed, oven-safe sauté pan on grill or side burner over medium-high heat. Add the olive oil and the potatoes, letting potatoes brown lightly on all sides. Add the broccoli and toss to coat with oil. Close lid and let cook for 2–3 minutes.
Add the peppers and garlic to the pan with the potatoes, toss and let cook 1 minute. Remove from heat and season with salt and pepper.
Slice flank against the grain and serve with roasted vegetables.
