This one's a classic for a reason: creamy mozzarella, vine-ripened tomatoes, fresh basil and an easy balsamic reduction create the perfect classic caprese.
- ½ cup balsamic vinegar
- 4 vine-ripened tomatoes, sliced into ¼-inch rounds
- 2 BUF Ovoline di Bufala, sliced into ¼ inch rounds
- 3–4 tablespoons extra virgin olive oil
- 7–8 leaves fresh basil
- Salt and black pepper, to taste
Bring balsamic vinegar to a boil in a small sauce pot and reduce by half. Let cool to room temperature.
Shingle the tomatoes, mozzarella and basil leaves on a serving platter. Season with salt and black pepper to taste, and drizzle with olive oil and balsamic reduction before serving.
