This sweet, spiced grilled pineapple goes great with savory dishes like pulled pork or as a decadent dessert topping for vanilla ice cream.
- 1 ripe pineapple
- ¼ cup dark rum
- 1 stick butter, melted
- ¾ cup sugar
- 1 teaspoon cinnamon
Preheat grill to medium-high heat. Cut the edges off the pineapple and slice into 8–10 rounds, depending on size. Drizzle rum over the slices to flavor the pineapple.
Place the melted butter in a shallow dish. Combine sugar and cinnamon in a separate dish. Dip each pineapple slice first in the butter and then the sugar mixture.
Arrange slices on hot grill and turn with tongs when sizzling hot, approximately 5 minutes per side.
