- 8 ounces Fresh to Market Italian Sausage, bulk
- ½ cup yellow onion, small diced
- 1 tablespoon garlic, minced
- 2 tablespoons butter
- 2 tablespoons flour
- ¼ teaspoon chili flakes
- 2–2½ cups whole milk
- Vinegar-based hot sauce, to taste
- Salt and black pepper, to taste
Heat a large sauté pan on medium-high heat. Add Italian sausage and cook until well browned and broken into small pieces. Remove sausage from the pan, retaining any rendered fat, and add the onion, garlic and butter. Sauté for 2–3 minutes, scraping any browned bits up off the bottom of the pan. Add the flour and chili flakes and stir until evenly incorporated.
Add the milk ½ cup at a time, stirring until fully incorporated before adding any more. Once 2 cups of milk have been added, let gravy simmer for 5 minutes, adding more milk for desired consistency. Adjust seasoning with hot sauce, salt and black pepper. Serve over freshly baked biscuits.
