If you can’t get enough pumpkin spice, you’ll love these three-ingredient sweets. Just watch out—they’re as easy to eat as they are to make!
- 24 ounces pitted dates, divided
- 3–4 tablespoons pumpkin spice
- 1½ cups pecans, chopped fine
Puree half of the dates in a food processor and place in a work bowl. Cut remaining dates into ¼-inch strips and then small dice.
Heat oven to 200°F.
Spread diced dates on a lined baking sheet and dry in oven for 30 minutes. Remove from oven and let cool for 10 minutes.
Combine diced and pureed dates and mix thoroughly. Take about ½ cup of the mixture at a time and shape into ¾-inch diameter logs. (You can dampen your hands with water to help prevent the mixture from sticking to your fingers.)
Dust each log with pumpkin spice, then roll in chopped pecans, pressing to make sure they stick. Cut logs into 1½-inch pieces.
Store in an airtight container for up to a week.
