Ingredients

  • 8 ounces farfalle pasta
  • 3 tri-colored sweet mini peppers, sliced into rings
  • 1 pint heirloom cherry tomatoes, halved
  • 1 cup Kalamata olives, halved
  • 1 cup shredded Parmesan cheese
  • 1 pint perlini fresh mozzarella balls
  • ½ bunch Italian parsley, chiffonade
  • ½ cup extra virgin olive oil
  • Kosher salt, to taste
  • Cracked black pepper, to taste

Preparation

Boil pasta in salted water for 12 minutes, or until al dente. Rinse cooked pasta with cold water and drain.

Place pasta in a large work bowl, add all remaining ingredients, mix until well combined, and serve.
