Cooking Instructions: Leg of Lamb

				For a stunning centerpiece for your feast, serve this succulent, herbaceous leg of lamb on a bed of crushed potatoes.
Ingredients
- 1 leg of lamb
 - Kosher salt, to taste
 - Cracked black pepper, to taste
 - Fresh garlic, chopped, to taste
 - 1 bunch Italian parsley, chopped
 - 2 sprigs fresh rosemary, chopped
 - 2–3 tablespoons olive oil
 
Preparation
Preheat oven to 350°F.
Place herbs, seasonings, and olive oil in a work bowl and mix until well-combined, then spread evenly over leg of lamb. Place lamb into a roasting pan.
Roast on the center rack for about 1 hour, or until a thermometer inserted into the center of the lamb reads:
- 120–125°F for rare
 - 130–135°F for medium-rare
 - 140–145°F for medium
 - 150–155°F for medium-well
 - 160–165°F for well done
 
Remove lamb from the oven and let rest approximately 20 minutes.
