Heirloom Tomato, Black Bean, & Corn Salsa

Serve this summery salsa chilled or room temperature over grilled chicken or fish.
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 medium red onion, sliced into ¼-inch strips
- 3 ears yellow corn, shaved
- 2 heirloom tomatoes, small diced
- 1 serrano pepper, seeded and minced
- ½ bunch fresh cilantro, stemmed and chopped
- ½ bunch fresh basil, stemmed and chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 tablespoon toasted cumin seeds
- Juice of ½ lemon
- Kosher or sea salt, to taste
- Cracked black pepper, to taste
Preparation
Heat olive oil in a sauté pan. Caramelize onions over medium heat for 6–8 minutes. When onions turn golden brown, add corn and cook 1 minute, stirring occasionally, before removing from heat.
Once cooled, transfer mixture to a medium mixing bowl and toss together with remaining ingredients. Season to taste with salt and pepper, then serve.
