Preparation
Bring a pot of salted water to a boil. While the water heats, cut broccoli into small florets close to the bud clusters, then cut the stems into ½-inch pieces.
Add broccoli to the boiling water, cover with a lid, and boil for 3–4 minutes, or until the florets can be easily pierced. Remove broccoli and place in a blender with about half of the hot broccoli water—depending on the size of your blender, you may need to blend in batches to avoid splattering.
Blend thoroughly until smooth, then add grated cheddar and continue blending to incorporate air, giving it a frothy texture and full-bodied appearance. Season to taste with salt and pepper.
Serve immediately, garnished with green onions, pepper, and grated white cheddar.
