Preparation
In a large pot, cook the bacon until crisp, stirring often. Remove the bacon to a paper towel-lined plate until cool, then chop and reserve.
Add the onion and bell pepper to the same pot and cook until tender. Add the ground beef and cook until browned, then drain off any excess fat.
Add remaining ingredients and ¾ of the reserved bacon, then stir to combine. Simmer for 1–2 hours.
Serve chili with shredded cheese, cilantro, and the remaining bacon.
