- 2 cups water
- 2 cups sugar
- 3 cups sparkling wine (such as brut Champagne), chilled
- 1½ cups sparkling water, chilled
- 2 lemons, juiced
Combine 2 cups water and 2 cups sugar in a small saucepan and bring to a rolling boil for 2 minutes to make simple syrup. Remove from heat and cool completely.
Once cool, combine simple syrup with chilled sparkling wine, sparkling water and lemon juice. Pour mixture into an ice cream maker and freeze according to the directions on the machine.
When frozen, transfer sorbet to a sealable plastic container and keep in freezer until ready to serve.
