This is a delicious twist on the classic Caprese. The avocado adds a creamy counterpoint to the acid in the tomatoes, while the Casero cheese adds a salty tang.
- 2 Heirloom tomatoes sliced ¼ inch thick
- 2 avocados peeled, seeded, and cut ½ thick lengthwise
- 1 tablespoon whole cilantro leaves
- 2 tablespoons Casero cheese crumbled
Simply layer the tomatoes and avocados on top of each other and repeat until they are gone. Garnish with the Casero crumbles and cilantro leaves.
