- 1 pound Nugget Markets Roasted Red Pepper and Garlic Sausage
- 2 tablespoons extra virgin olive oil
- 2 shallots, large dice
- ½ cup red wine
- 12 ounce can whole peeled tomatoes
- 1 teaspoon red chili flakes
- 1 pound penne rigate
- ¼ cup Pecorino Romano
- 2 tablespoons parsley, rough chopped
Bring a large pot of salted water to a boil.
In a cold pan, place the olive oil and the sausage, balled up into tablespoon-sized portions. Turn the pan on medium-low heat. When the sausage has browned and is nearly cooked through—roughly 6-8 minutes—add the shallots and deglaze the pan with the red wine. Allow to come to a boil and reduce by half, then add the tomatoes and chili flakes. Bring just to a boil then reduce to a simmer.
Drop the pasta in the boiling water while the sauce continues to cook. When the pasta is about 1 minute from being completely cooked, strain it and place it into the sauce to finish cooking. Stir frequently until the pasta is coated with the sauce. Place in bowls and garnish with the Pecorino and parsley.
