A fun twist on a classic, it’s very similar to the original, with a deep rich flavor from the dark rum. Cheers!
- 2 oz. Aged rum
- juice from ½ lime
- 1 oz. mint simple syrup
- mint leaves
- top with chilled club soda
In a tall glass add rum, mint simple syrup and lime juice. Fill glass with ice, then top with club soda. Stir and add a mint sprig for garnish.
In a medium-size sauce pan over medium heat, combine 1 cup hot water and 1 cup sugar. Heat until sugar is dissolved, stirring frequently. Remove sauce pan from heat, add mint leaves, and cover for 30 minutes. Pour syrup liquid through a strainer, removing mint leaves, and into a medium-size bowl. Refrigerate simple sauce in until well chilled.
