A fun twist on a classic, this crafty cocktail is similar to the original, but with a deep, rich flavor from the dark rum. Cheers!
- 2 ounces aged rum
- 1 ounce mint simple syrup
- Juice of ½ lime
- Club soda, chilled
- Mint sprig for garnish
In a tall glass, add rum, mint simple syrup and lime juice. Fill glass with ice, then top with club soda. Stir and add a mint sprig for garnish.
To make mint simple syrup, combine 1 cup hot water and 1 cup sugar in a medium sauce pan over medium heat. Heat until sugar is dissolved, stirring frequently. Remove sauce pan from heat, add 30-40 mint leaves, and cover for 30 minutes. Pour syrup liquid through a strainer, removing mint leaves, and into a medium bowl. Refrigerate until well chilled.
