Pancake Coin Brochettes with Fresh Berries

These adorable mini pancake stacks make delightful brunch hors d'oeuvres or a sweet treat for breakfast in bed.
Ingredients
- 1¼ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup unsalted butter, melted
- 1¼ cups buttermilk
- 2 large eggs
- 2 teaspoons canola oil
- 1 pint berries
- ¼ cup powdered sugar, for garnish
- Bamboo skewers, for serving
Preparation
In a medium bowl, whisk together flour, sugar, salt, baking soda, baking powder, melted butter, buttermilk, and eggs. Set aside to rest; some lumps will remain.
Heat a large nonstick skillet over medium heat, then add canola oil. Pour about 1 tablespoon of batter into the pan for each mini pancake and cook until bubbles cover the top, about 2 minutes. Flip pancakes and cook until golden brown, about 1 minute. Repeat with remaining batter.
Skewer 1 berry and 3–5 pancake coins on each bamboo skewer, then sprinkle with powdered sugar and serve.
