- 1 ounce butter, softened
- 4 slices sourdough bread, sliced
- 1 ounce Pecorino Romano, grated
- 4 ounces herb gouda
- 4 ounces Mt. Tam Triple Crème
Butter one side of each of the four slices of bread. On a plate, sprinkle grated Pecorino Romano, then press the buttered side of each bread slice into the cheese to coat; set aside.
Preheat a greased, medium nonstick frying pan to medium-high heat.
Place bread cheese-side-down onto pan. Layer gouda and Mt. Tam to thinly cover two of the bread slices. Top with remaining slices of bread, buttered sides up.
Grill sandwich for about 1 minute, until toasted and golden. Flip sandwich and continue to grill until golden brown and crisp on both sides.
