Sunburst Squash & Turkey Sliders

Enjoy a healthier version of an all-time American favorite! Instead of a bun, these adorable sliders use sunburst squash for a tasty twist on a mini hamburger.
- 4 sunburst squash
- 1 ounce olive oil
- 6 ounces ground turkey
- 1 tomato
- 4 ounces lettuce leaves
Preheat oven to 400°F.
Cut sunburst squash in half widthwise. Heat a large sauté pan over medium-high heat, then add olive oil. Just as oil begins to smoke, place squash cut-side down into pan. Sear squash for 2 minutes, turn over and bake in oven for 3-5 minutes, until edges are golden brown. When done, set aside to cool.
Form ground turkey into 4 equal patties. Heat sauté pan to medium-high heat and sauté for 3-4 minutes per side, or until a probe thermometer placed into the center of the patty reads 155ºF.
Place patties onto bottom half of squash, top with tomato slice, lettuce leaf and squash top, then serve while warm.
