This version is straight from Spain and is a common variation on the classic tomato soup.
Ingredients
- 10 slices country bread, crust removed
- 3.5 cups water
- 2 cups green seedless grapes
- ½ cucumber, peeled & seeded
- ¼ cup Marcona almonds
- ¼ cup sherry vinegar
- ¼ cup Extra virgin olive
- 2 tsp. kosher salt
Preparation
1. Combine all ingredients and puree with an immersion blender until smooth. Chill one hour before serving.
