This delicious meal is super easy to make and enjoy, especially if you're looking for a way to use up leftover chicken.
- 8 ounces shredded chicken meat
- 1 can diced tomatoes with green chilies, 14.5 ounces
- 8 flour tortillas, 10-inch
- 4 ounces shredded cheddar and Jack cheese blend
Preheat oven to 400°F.
In a medium sauce pan, heat tomatoes and chicken meat over medium heat, to 160°F.
Spoon approximately 3 ounces of the mixture onto a tortilla, roll it up and place into a shallow casserole dish. Repeat with remaining tortillas, then top with any remaining sauce and shredded cheese.
Bake at 400°F for 10-15 minutes or until cheese is melted and golden brown. Serve topped with salsa, guacamole or enchilada sauce.
