Soul-mate to our Jamaican Jerk chicken, these are truly delectible.
- 3 plantains, sliced on the bias into ½ inch slices
- 2 cups canola oil, for frying
- salt & sugar to taste
Heat oil in a narrow deep sauce pot to 350ºF. Slowly drop plaintain slices into hot oil and fry for 5 to 7 minutes until golden. Drain and immediately season with salt and sugar.
