With rich coconut and tangy lime, these refreshingly sweet and tart frozen treats are like a tropical pie on a stick!
- 1 can coconut milk, 15 ounces
- ½ cup lime juice
- ⅓ cup honey
- Zest of one lime
- ½ teaspoon coconut extract
- ⅓ cup shredded coconut, toasted
In a blender on low speed, combine coconut milk, lime juice, honey, lime zest and coconut extract until smooth.
Pour mixture into popsicle molds, tapping the sides of the molds periodically to remove any bubbles. Top with a layer of toasted coconut.
Insert popsicle sticks and freeze overnight.
