World-Famous Bread Pudding

The secret to this popular bread pudding is baking it in a bain-marie water bath. Serve with vanilla ice cream for extra decadence.
Ingredients
- 6 whole eggs
- 3 egg yolks
- 1 cup cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 8 cups country white bread, cut into 1-inch cubes
- 1 cup raisins
Preparation
Preheat oven to 350°F.
In a large mixing bowl, whisk together the eggs, yolks, cream, milk, sugar, vanilla, and cinnamon. Add bread and raisins to the liquid mixture, then let soak for 15 minutes.
Pour the mixture into a 9x13-inch pan. Place the baking pan into a larger roasting pan, then add water to the roasting pan until two thirds of the way up the outside of the 9x13-inch pan.
Bake for 30 minutes, or until the center of the pudding is no longer liquid but firm in texture. Be careful taking out of the oven as the water in the larger pan will be very hot.
Let cool 15 minutes before serving.
