This remarkably gooey grilled cheese sandwich combines the richness of fresh goat cheese with the crispy tang of green apples and a little figgy sweetness.
- 1 ounce butter, softened
- 4 slices blue cheese and walnut bread
- 8 ounces fresh goat cheese
- 2 ounces fig spread
- 4 ounces green apples, sliced thin
In a large nonstick frying pan, heat half the butter over medium-low heat.
Spread the remaining butter on one side of each of the four slices of bread, then place bread butter-side-down into the frying pan. Arrange the goat cheese on two of the slices of bread. On the other two slices of bread, spread the fig spread and arrange the green apple slices.
With the fillings facing each other, place the apple/fig bread slices onto the slices with cheese. Grill for about 1 minute or until golden. Flip the sandwiches and continue to grill until golden brown and crusty.
Serve and enjoy immediately.
