This braised carrot and yam casserole is a Hanukkah and Passover classic. Make it your own with your favorite dried fruits and citrus!
- 1 pound baby carrots
- 1 pound yams, peeled and diced large
- ½ cup dried bing cherries
- ½ cup orange juice
- ¼ cup honey
- ½ orange, zested and juiced
- 1 tablespoon fresh lemon juice
- ⅛ teaspoon kosher salt
Combine all ingredients except for zest and simmer in a large pot for approximately 20 minutes, or until carrots and yams are tender.
Transfer to a large casserole dish and bake uncovered at 350°F for 15 minutes or until golden.
Top with zest and serve.
