Roasted Kalettes with Garlic, Pine Nuts, & Parmesan

Kalettes (a cross between kale and Brussels sprouts) are only in season a short while, but these little flavor explosions sure are worth the wait!
Ingredients
- 2 heads garlic
- 4 tablespoons extra virgin olive oil, divided
- 15 ounces kalettes
- Zest and juice of 2 lemons
- 2 ounces Parmesan cheese, shredded
- 2 tablespoons pine nuts, toasted
- Sea salt, to taste
- Cracked black pepper, to taste
Preparation
Preheat oven to 400°F.
Cut the tops off the garlic heads, then drizzle exposed area with 1 tablespoon olive oil. Wrap garlic in aluminum foil and roast in oven for 15 minutes.
Raise oven temperature to 450°F. Toss kalettes in remaining oil, then place on a sheet pan lined with parchment paper. Roast for 8–10 minutes, or until golden brown with charred edges.
Once garlic is cool enough to handle, unwrap foil and squeeze roasted cloves out onto the kalettes. Sprinkle with lemon zest, then combine with remaining ingredients in a bowl and toss gently to combine. Serve while still warm.
