Butternut Squash & Kale Salad

This tasty and quick fix vegetable side dish packs big nutrition. Add tofu or your favorite legume to make this into a complete vegetarian entrée.
Ingredients
- 1 cup vegetable broth, divided
- 2 pounds butternut squash, medium diced
- 2 bunches kale, chopped coarse
- ¼ cup apple cider vinegar
- ½ red onion, julienned
Preparation
Heat ½ cup vegetable broth in a medium pot, then add the butternut squash. Simmer squash until just tender, 6–8 minutes. Add kale and simmer 2–3 minutes, until kale is wilted, then set aside to cool.
Heat remaining broth and vinegar in a small sauté pan. Simmer for 6–8 minutes, until liquid is reduced by ⅔, then set aside to cool. Toss kale, squash, and onion with vinegar broth reduction and serve.
