Made with turkey, gravy, mashed potatoes and veggies, this savory dish is a great way to transform leftover fixin’s into a cozy comfort food.
- 2 tablespoons extra virgin olive oil
- ½ cup diced yellow onion
- ½ cup diced carrots
- ¾ cup cooked and diced turkey
- 2 cups turkey gravy
- ¾ cup frozen peas
- 2 tablespoons Italian parsley, minced
- 2 cups mashed potatoes
Preheat oven to 375°F.
In a small pan, cook onions in extra virgin olive oil for 5 minutes or until tender and translucent. Add carrots, turkey and gravy until heated through.
Fold in frozen peas and Italian parsley, then let everything simmer for 3 minutes.
Transfer mixture to a 6 x 6-inch oven-safe dish, then top with mashed potatoes. For a polished presentation, use a piping bag to pipe potatoes onto mixture. For a more rustic look, simply drop spoonfuls of the potatoes on top.
Place dish on a foil-lined cookie sheet (in case it bubbles over) and bake for 25 minutes, until bubbly and golden brown.
