Ingredients
Wheat Berry, Cashew, & Chicken Salad:

Sesame Soy Dressing:

Preparation
Bring a large and small pot of water to a boil on the stove. Add wheat berries to the large pot of water and boil over medium-high heat until berries have softened enough to chew, about 1 hour. Strain in a colander and rinse with cold water until cool.
In the small pot of boiling water, blanch snow peas for about 10 seconds, then immediately shock in ice water.
To make the sesame soy dressing, combine all ingredients and mix well.
To make the salad, combine wheat berries, snow peas, and all remaining salad ingredients in a large mixing bowl. Mix until evenly incorporated, then serve.
