Roasting Romanesco brings out the nutty flavors of this fun vegetable, and makes for a simply stunning side dish.
- 1 head Romanesco
- ½ cup olive oil
- 2 teaspoons kosher salt
- 3 tablespoons flavored olive or dipping oil, optional
- Juice of ½ lemon
Preheat oven to 375°F.
Trim off Romanesco's stem and leaves, then lay flat on a rimmed baking sheet. Drizzle with some of the olive oil, sprinkle with 1 teaspon salt and put in the oven to roast.
After 20 minutes in in the oven, baste Romanesco with remaining olive oil and sprinkle with salt.
For a fun twist, in the last five minutes of cook time, baste with flavored olive or dipping oil and turn the heat up to 450°F to achieve charring at the tips.
After removing Romanesco from oven, finish with lemon juice and serve.
