Corned Beef Soup

This simple soup is a fantastic way to use up leftover corned beef, and the addition of sauerkraut cuts through the richness and adds a more defined flavor.
- 1 tablespoon olive oil
- ½ onion, small diced
- 2 carrots, small diced
- 2 stalks celery, small diced
- ½ cup small diced potato
- 1 cup small diced corned beef
- 3 cups beef broth
- ½ cup sauerkraut
- Salt and pepper to taste
- 2 tablespoons chopped parsley
Heat olive oil in a 2-quart sauce pot on medium heat. Add onion, carrots and celery, and sweat for 2-3 minutes or until onion is translucent.
Add potato, corned beef and beef broth. Bring to a simmer and cook for 5-8 minutes, or until the potatoes are tender. Add sauerkraut and bring back to a simmer.
Adjust seasoning with salt and pepper. Finish with chopped parsley and serve immediately.
