This healthy and delicious side is packed with flavor and just happens to be pink. Beets, turnip, parsnip and kohlrabi make for great way to expand your veggie intake and try something new that easy to make and tasty!
- 2 each medium red beets, peeled & quartered
- 1 each large turnip, peeled & quartered
- 1 each large parsnip, peeled & quartered
- 1 each medium kohlrabi, peeled & quartered
- ½ cup half and half
- 1 tsp salt
In a large pot of cold salted water, bring beets, turnip, parsnip and kohlrbi to a boil over medium high heat.
Simmer vegetables until tender, about 45 minutes.
Drain vegetables, add half & half and salt, then puree with an immersion blender until smooth.
